What do you do when you find yourself in the ridiculously fortunate position of having avocados ripening faster than you can possibly eat them? You make an Avo & Strawberry Caprese Salad of course!

My mother in law is in the fortunate position of having an avo tree in her garden, the biggest problem is that the tree is old and very very fruitful, it’s literally impossible for her to consume the number of avos she’s currently harvesting. So this December I was on the receiving end of receiving 2 shopping bags overflowing with avos. So of course, I had to come up with some creative ways to use all the avos because simply allowing them to rot and throwing them away is UTTER sacrilege!
Avo & Strawberry Caprese Salad
I stumbled across this recipe online and it was a total winner! Refreshingly delish and makes for a nice change from the standard green salads!

Avo & Strawberry Caprese Salad
Ingredients
- 1 CUP halved cherry tomatoes
- 1 CUP sliced strawberries
- 1 CUP shredded mozzarella cheese
- 1 Ripe avo diced
- half CUP torn basil leaves
- Extra Virgin Olive Oil for drizzling
- Balsamic reduction for drizzling
- Black Pepper & Seas Salt to taste
Instructions
- Literally chop, dice and toss all the ingredients into your favorite salad bowl.
- Drizzle with Extra Virgin Olive Oil & Balsamic Reduction
- Sprinkle with Black Pepper & Sea Salt to taste
