Currently, my kids are in the pool & I’m hiding in the shade of our patio, laptop out and sipping an ice tea. This screams summer for me!
Because I follow a low carb lifestyle, I don’t drink the pre-made iced tea’s, preferring instead to make my own. Homemade is always best and at least that way I know exactly what has gone into making my ice tea!
Also, because I follow a low carb lifestyle, my choice of iced drinks is limited so this is a great way to have some flavor and get in lot’s of extra antioxidants when I want something more than just water.
What’s your favorite recipe, here’s mine:
Lemon & Mint Rooibos Iced Tea
- 4 x Freshpak Rooibos Lemon Tea bags
- Handful of fresh mint
- Fresh Lemon Slices
- Honey to taste
- 1.5 L boiling water
- Pour 1.5L of boiling water over 4 Freshpak Rooibos Lemon Tea bags
- Allow to draw for about 5 minutes.
- Remove the tea bags
- Add about a tablespoon of honey, or to taste
- Throw in some lemon slices & a handful of fresh mint leaves.
- Refrigerate for two hours.

You can make it sugar free!
I made a couple of these recipes and substituted the sugar with either a sugar substitute like Xylitol or adding honey to taste.
I’m also dead keen to try out these peach flavored ice lollies!
