If you follow me on Instagram, then, in the last week,Β  you will have learned that I am OBSESSED with figs! And after I scored a box of beautiful green and purple figs, I head home and put together this incredibly tasty seasonal, roasted butternut and fig salad.

The Recipe

Roasted Fig & Butternut Salad

A delicious, tasty, seasonal salad.

Cook Time 35 mins
Total Time 45 mins

Servings 4


  • 1 tablespoon coconut oil
  • 2 cups raw butternut diced
  • 1 teaspoon minced garlic
  • 1 tablespoon pumpkin seeds
  • 6 figs
  • 1 red onion sliced
  • 4 handfuls baby spinach & rocket
  • salt & pepper to taste


  • Pre-heat your oven to 180 degrees C
  • Add your diced butternut & drizzle with the coconut oil
  • Pop into the oven for 25 minutes
  • Remove from the oven and add the pumpkin seeds & figs
  • Pop back in the oven for 10 minutes
  • Remove from the oven and allow to cool
  • Assemble your rocket and spinach in a salad bowl of your choice.
  • Top with the cooled figs, pumpkin seeds & butternut
  • Drizzle with olive oil & balsamic vinegar and serve cold
