If you follow me on Instagram, then, in the last week, you will have learned that I am OBSESSED with figs! And after I scored a box of beautiful green and purple figs, I head home and put together this incredibly tasty seasonal, roasted butternut and fig salad.
The Recipe

Roasted Fig & Butternut Salad
A delicious, tasty, seasonal salad.
Ingredients
- 1 tablespoon coconut oil
- 2 cups raw butternut diced
- 1 teaspoon minced garlic
- 1 tablespoon pumpkin seeds
- 6 figs
- 1 red onion sliced
- 4 handfuls baby spinach & rocket
- salt & pepper to taste
Instructions
- Pre-heat your oven to 180 degrees C
- Add your diced butternut & drizzle with the coconut oil
- Pop into the oven for 25 minutes
- Remove from the oven and add the pumpkin seeds & figs
- Pop back in the oven for 10 minutes
- Remove from the oven and allow to cool
- Assemble your rocket and spinach in a salad bowl of your choice.
- Top with the cooled figs, pumpkin seeds & butternut
- Drizzle with olive oil & balsamic vinegar and serve cold
The salad sounds really yummy, and it looks SO PRETTY!

You can swap out the butternut for pumpkin to reduce the carb count.
