Roasted Fig & Butternut Salad
A delicious, tasty, seasonal salad.

Total Time 45 minutes mins
- 1 tablespoon coconut oil
- 2 cups raw butternut diced
- 1 teaspoon minced garlic
- 1 tablespoon pumpkin seeds
- 6 figs
- 1 red onion sliced
- 4 handfuls baby spinach & rocket
- salt & pepper to taste
Pre-heat your oven to 180 degrees C
Add your diced butternut & drizzle with the coconut oil
Pop into the oven for 25 minutes
Remove from the oven and add the pumpkin seeds & figs
Pop back in the oven for 10 minutes
Remove from the oven and allow to cool
Assemble your rocket and spinach in a salad bowl of your choice.
Top with the cooled figs, pumpkin seeds & butternut
Drizzle with olive oil & balsamic vinegar and serve cold
